The first 5 digits of the serial are the date stamp (in reverse order).

The year is a single digit:

9 = 1999

0 = 2000

1 = 2001

2 = 2002

3 = 2003

Here's the info off one of my FF2 carts:

21302200 = DD MM Y ### = 21 30 2 200

Reverse the date stamp 21 30 2 = 2 03 12 = 2002/03/12

Here's ototo's cart serials for Riviera v00 and v01:

Riviera v00: 51702207 = 51 70 2 207 = 2002/07/15 207

Riviera v01: 50802216 = 50 80 2 216 = 2002/08/05 216

ototo's blog has Release Dates but the date stamp in the serial would be the cart production date.
